Giving Boulder Love, Day 6: Haystack Fever

This is Day 6 of a 21-Day Salute ™, an attempt to kick start my blog writing and to express my gratitude for living where I do. Yet another find from the Boulder County Farmer’s Market. Haystack Mountain Goat Dairy makes a variety of cheeses and hands out samples at the Farmer’s Market. From the chevre to the feta to the aged hard cheese, it doesn’t take much to close the sale.

Turns out goat’s milk makes for some tasty cheeses and is healthier than cow’s milk. Goat cheese is easier on your GI tract, meaning that it’s better for sensitive stomachs and those who have a hard time digesting normal cheese. It’s hard to describe the difference in the way goat cheese tastes, perhaps a bit tangy, but if you like your cheese creamy, this won’t disappoint.

Goat cheese is delicious in salads and Haystack’s site features goat cheese recipes from top chefs all over Boulder, including the Top Chef himself, Hosea.

My favorite is the Marinade, but I’m a sucker for big pieces of garlic floating around with my cheese. Call me crazy but I think there’s nothing better to spread on a cracker.
